'I work in La Brasserie, one of the best new restaurants in London. As head waiter, I look smart all the time. I look after the customers when they first arrive and I also deal with any problems. I serve at the tables, but if we are very busy then I do help out. Our staff wear a uniform, just black trousers and a white shirt. I make sure they look clean and tidy. Staff be professional but they be too friendly with the customers. For example, they stand at the table chatting. People come to us for a meal, not to chat to the staff. Now, if you'll excuse me, I just check today's menu with the chef.'
